Bell Peppers

PEPPERS!  Red pepper is 
actually a fully ripened green pepper with a milder flavor, contains lycopene & beta-cryotixathin that both lower the risks of certain cancers.  PEPPERS!.. As artful looking as they taste. . . . PEPPERS!   Jazzy taste to the palate baked in olive oil till they are soft in vision.. . As the pepper ripens, it tastes better and has more nutritive value.  They are an excellent source of vitamin A & C, two very powerful antioxidants that may help reduce the risk of cardiovascular disease and some cancers.  Baked or raw does the body good.

ZUCCHINI

"YAWN"!!..3:30am to be exact! About to head to Teterboro and hit the skies for a weekend in Jupiter Island,Florida.. Desiring vegetable fix for plane ride..this veggie will have its own seat right next to "MOI" and the winner is…Let’s give a round of applaud for“ZUCCHINI”.  Zucchini squash is the favored jewel of summer squashes.  Excellent source of vitamin C..95% water content means low calories (13 per half cup) I like that!   Baked. .steamed, either way don’t peel as the majority of nutrients are in the skin. Everyone is ready. . grabbin my bowl. . Up Up and away!!

I dream Spinach

Dinner at Tracie's
First day of the new year. . Spinach in my thoughts... I smile. . .Why?? Spinach and I have had an on going relationship for years.. . Pretty pretty green leafy thing it is. . I hold this vegetable in high regard . . ..I watch with admiration as the green leaves wilt into tastefulness bubbling away in olive oil. . .I peek under the top constantly as my body cannot wait until the 2 minute cooking of these lusturous green leaves come to fruition so I can swallow and release the endless amount of iron/calcium/and fiber my body requires to keep it sufficiently beautified:)
