Baked Chicken Carrots & Potatoes
Friends over tonight…Not all in vegetarian mode…So being that, I must make that unselfish decision to accommodate others palate.  Chicken potatoes and carrots it will be…I’ll bake this dish in olive oil and H2o. . I’m not big on unnatural seasoning thus allowing the natural juices from the chicken and carrots to flavor the dish.  Picturesquing this dish with fresh carrots who are low in calories and rich in antioxidants .  Carrots contain Vitamin E:  great for immune function. Vitamin K: helps promote bone growth and Vitamin A:  did you know carrots contain the highest amount of Vitamin A than any other vegetable?!  Potatoes also accompany this dish…Potatoes are a great source of fiber, calcium and potassium which contribute to a great cardiovascular system.  A quick dish full of love...Dig in Ladies!

String Beans and Red peppers





Stringbeans & Red Peppers
Stringbeans and red peppers will be gracing the pallet as a light evening meal.  The stringbeans slightly boiled and then lightly sauteed in olive oil. Red peppers as well sauteed in olive oil add a zest of natural sweetness to this glistening dish.  Both vegetables afford our body loads of nutrients such as vitamins A & C beneficial to our immune system. Protein is packed mostly in the pods of the bean…I love the slight crunch of the pod…“Crunch”..let the proteins flow! Soluble fiber great for our blood chemistry. Minerals such as potassium, calcium and iron…all necessary for bone density, blood health and muscle maintenance.  Who thought these lean green beans packed such a nutritional punch?!  Proudly standing alongside these legumes are red peppers. Not to be out shined by their green bean partner red peppers bring an additional set of nutrients such as Omega 3 & Omega 6.  Important for keeping the heart beating right.  So do enjoy this double dose of nutritional excitement!!
