Collard Greens

Needed lemons for my hot water and lemon treat. . opens the palate. . Off to the market I go.  . Reaching for lemons. . glanced to my right. . There they sat. .looking freshly picked . . all bunched up in bundles. . .I stared and thought. .I'll bring two bundles of you to my humble abode. . journey ending in pot of boiling water seasoned with turmeric and anise seed. . As they boil away...I think of these attractive leaves that contain very good amounts of soluble and insoluble dietary fiber that helps control the bad cholesterol levels (LDL).  And thats just one of the benefits.. Collards are rich in invaluable sources of phyto-nutrients with potent anti-cancer properties such as di-indolyl-methane (DIM) and sulforaphane that have proven benefits against prostate, breast, cervical, colon, ovarian cancers by virtue of their cancer cell growth inhibition and cytotoxic effects on cancer cells.  With that much said and known as pretty as they look on that plate you're viewing its time to put that prettiness where it counts. .cause we all know what matters most is on the inside..."DIG IN"
